Quite a lot on the nose here, with not only fresh apricot but also dried herbs and apricot kernel. The fruit is certainly ripe, but with a rather flat and heavy texture due to low acids. There’s a nice nuttiness to the finish, but this is hard going with so little lift. There’s a light grip on the finish – a subtle sign that this was fermented with its skins.
Unfiltered and unfined, fermented in beeswax-lined amphorae.
