Slightly gluey nose with some attractive elderflower aromas and a bit of spritz, but then wild plums, whitecurrants and fresh herbs. Full of fruit and character, really lively acidity, and then drops away to a slightly vegetal nose. Fine tannins and quite a salty finish.
Easy-going and enjoyably funky – yet also rock solid, I went back for a glass on day two and it had held perfectly.
Short skin contact on all varieties (5-6 days), unfiltered and with very low sulphites (23mg/L total)
