Tangy lemon peel, appealingly wild. Super fresh and lively, with ripe citrus fruits. Slightly funky and yeasty on the finish. Impressively fresh and youthful. Some sage. Overall, surprisingly gentle and subtle, showing Rebula’s citrussy, herbal character very nicely. Very soft structure.

Finish is a bit vegetal and on the verge of mousy. A bit unstable right now, and if you leave it over night, it turns into the most severe mouse-bomb I’ve experienced in millenia. If that sorts itself out with more bottle age, this could develop in an interesting direction. If not…..

Fermented in oak and on its skins for eight months. No added sulphites or anything else, at any point. Bottled by the full moon, unfiltered and with a substantial deposit in the bottle.
