Thom Wachter’s Ried Fasching is a super fresh, high acid style loaded with his trademark perfumed cassis fruit (something that I’m told he accentuates by means of some cold maceration before fermentation). There’s a surprising amount of concentration to the fruit, all beautifully balanced by the lively acidity. The finish unfolds to a long and slightly creamy texture.
This is perfection – everything in balance, excitement, drinkability, typicity of the grape variety and something to say about the vineyard site too.
