It’s -10C on a bright November morning when Ian Dai1 and I set out from our hotel in Yinchuan to drive to the Helan mountains. Ian sets the stage for my first visit to the country’s wine lands, and he’s not exactly positive. “One major Chinese wine region fails about every ten years” he says, “and I think Ningxia will be next.”
